Ciğer Ezme ( Liver Mash )
Ingredients :

- 400g Calfs liver
- a bunch of parsley
- a soupspoon thyme
- a soupspoon dried mint
- a soupspoon red pepper
- a soupspoon black pepper
- five soupspoon oil
- enough salt

Method :

1. Seperate the membrane of the liver and boil it 20 min. in the water.
2. After ıt cools down, grate it.
3. Fry it with five soupspoon oil in low heat and add thyme, dried mint, red pepper and black pepper in order.
4. Finally add salt and fry a little more.
5. Place it to the service plate and decorate with the parsley and serve cold or warm as you like.
6. It is generally used as a garniture with the pasta or rice.
